Big Brother

So the past 4 or 5 days in Lexington the weather has been crazy.. lots of thunder, lightning, wind, and rain. Nothing too serious has hit us, but we have had lots of “tornado warnings”. David and I apparently really worried about these weather emergencies because whenever the national weather service issues one we are informed in every way possible. UK calls David and texts me, and they send me 2 emails. But the most bizarre thing that happens is that an automated voice comes over these speakers which are secretly hidden somewhere on our street and surrounding streets telling us about the weather emergency.


So creepy. I guess it takes a weather emergency to find out that there have been speakers and who knows what else surrounding you and your house all of this time. Here comes an announcement now… I can hear it through my windows. Hello, Big Brother.

Josh's Birthday

This past weekend was full of family fun as David and I headed up to NKY for another baby shower and to celebrate my little brother’s birthday. On April 16th he turned 9 and it was such a fun day!



We started the day out by eating breakfast with him, playing some wii and then going to the restaurant of his choice, Red Robin, for lunch. After that, I went to a baby shower for a bit, then David and I met him, my dad and my sister for some laser tag. That’s right… It was a lot more fun than I expected. After laser tag we played a few arcade games, like ski ball and car racing. It was so fun to be a little kid again :) It continued to be a rainy day so we went home, had some awesome chocolate cupcakes and Grater’s Ice Cream and then watched The Karate Kid (Jen’s present to Josh). On Sunday David and I got to play tennis with Josh since it was beautiful outside, and since we got Josh his own racket for his birthday. He loved his day and it was cool that it meant so much to that 9 year old boy that his sisters (and brother) came up for his birthday.



It is so crazy that he has grown up so fast… Here are lots of pictures dedicated to him and his special day!

That was the weekend and now we are back in to the grind of school. It is getting pretty intense so I may not be posting as much in the next few weeks. But who knows… sometimes when I have lots to do I procrastinate more and thus blog more often. We will just see.

Homemade Pizza


Although it may be strange this Homemade Pizza sums up a lot of our weekend.



On Friday night David and I went out on a date to dinner at Abuelos and then a movie at the cheapies. We can financially go on a date like this about once a month and we really look forward to it!.Our dinner was awesome and the movie that we saw was Tangled… so good! For real, I was laughing the whole time.



Back to the pizza. On Saturday morning we got up nice and early to some beautiful weather. We took our pup and some grocery totes on a walk to the farmer’s market here in Lexington. It is only a 15 minute walk to the market from where we live and this past Saturday was the first weekend that it was open on Saturday! We hope to go most Saturdays and take part of our grocery budget to purchase our fruits and veggies there. We bought some corn, onions, honey, strawberries and… tomatoes. David and I don’t usually like tomatoes but we LOVE real, fresh, local tomatoes. And these tomatoes are the stars of this pizza.



So this morning we woke up again to a beautiful morning, went to church, then invited our friends Kellie and Ian over for lunch. And as you probably guessed, we ate this awesome dish. Here is the recipe:




Homemade Pizza


Ingredients




1 packet active, dry yeast


3 cup water


1/8 tsp sugar


3 cups flour


1 1/2 tsp salt


1 Tbs olive oil


Cooking Spray


2 tomatoes


1 lb fresh spinach


3-4 cloves of garlic


Some salt, pepper, oregano and basil to taste


2 cups mozzarella cheese



To make the dough, fill a measuring cup with 1 cup of warm water. Mix in the sugar, then sprinkle the yeast over top. Let it sit for 5-7 minutes until it is bubbly. In the meantime, mix together flour and salt in a bowl (if you have a kitchen aid, use it!). Once the yeast is activated, pour the mixture into the flour and salt. If you have a Kitchen aid mixer, use the kneading tool and just run it on low until a dough is formed. If not, just use your hands to knead.


Put the dough in a bowl coated with cooking spray, and then coat the dough with the spray. Cover it with a clean kitchen towel and let it rise for an hour. I usually put mine in the oven at the lowest heat possible and it works well. Wherever your bread rises, it has to be warm (about 85-90 degrees) and free from drafts.



After an hour it should be double the volume that it was at first. Take it out, punch the dough, turn it around, coat with spray and let it rise again for 30 minutes.


Alright, now you have nice yeasty dough! Sprinkle some flour on two pieces of parchment paper (big enough to hold a pizza). Your dough should stay on the parchment paper the whole time. Otherwise it gets holes easily. You can either make 2 pizzas, which fed 4 of us, or you can make 1 and then freeze the remaining dough. So split the dough up, roll it out or if you get brave toss it in the air until you kind of have a pizza-shaped crust. Fold up the edges just a bit. Spread some olive oil on the dough, then put it back in the slightly warm oven to rise for 20 minutes.


While that is rising, chop up your tomatoes (here, I cut out the really wet part because I have found that it makes the pizza too runny, but it is up to you!). Also, chop up your garlic, and rinse your spinach.


Finally, remove the risen dough from the oven, then preheat the oven to 450 degrees. Spread the garlic, basil, oregano, salt, and pepper on the crust. Add anything else you like (sometimes I put red pepper or pepperoni for the hubs). Then add a layer of spinach, one of the tomatoes and 1 cup of cheese. If you are making both pizzas, do the same for the other. Then bake the pizzas in the oven for 15ish minutes.

So I know this may sound a bit complicated, but I promise it is easy. The biggest thing is giving yourself plenty of time to allow the dough to rise. And it doesn’t have to be super exact. For example, I whipped up the dough this morning and let it rise for the first hour while I got ready for church. Then I flipped it and turned the oven off and just let it sit in there for the 2 hours that we were gone at church. This allowed it to rise enough the second time. Then when we got home we only had to do the easy part. You should make this-it is so good!

The Calm before the Storm



This week my professors must have gotten together and decided to ease up on the homework because for the first week of the semester I felt like I could breathe… and what a wonderful feeling it was. Rather than having 5 homework assignments I had 3, and one of them was moved back to Monday. So really I only had two. If I were a perfect student, I would have taken the extra time to begin studying for finals which are 4 weeks away. But no one is perfect. A the title alludes, I realize that this week was just the calm before the storm of finals, but I decided to take it and rest. I still have weeks to study.



Before this week, here is what a typical day looked like for me:


-Get to school at 9. Do 2-3 hours of homework.


-Go to class for 3 hours.


-Do 3 more hours of homework.


-Come home and take Rooney for a walk, or go to the gym.


-Make and eat dinner.


-Do 3 hours of homework.


-Go to bed.


-Repeat



However, this week was fun! There was only one night when I executed the above list. On Tuesday night David and I went to our friends’, the Rossine’s, house for dinner and ate delish Chicken Tacos. The recipe was from the Pioneer Woman, who is an awesome blogger and cook. You should check out her website here.



On Wednesday night I played on the math grad students’ softball team. That is right. I bet you never thought you would hear me say that for multiple reasons. You see, initially I refused to play with them, but the tricky captain put me down as an alternate and then came to me Monday explaining that since one of the girls was out of town they would have to forfeit if I didn’t play. So being the good sport that I am I agreed, and honestly it wasn’t as bad as I thought it would be. I mean, we lost terribly. But my performance wasn’t too shabby. I got two base hits and they put me in left field (which is where most people hit the ball), and I actually didn’t do terribly there. After the loss we celebrated with dinner at Puccinis, yum! Then we went to Orange Leaf for frozen Yogurt, double yum!



Last night we drove my sister to Dry Ridge where we met my parents for dinner. They are all going to Chicago this weekend since it is my little brother’s spring break, but I obviously couldn’t go because of school. So we traded Jen for Zoie, my family dog, and we brought her back to Lexington with us to spend the weekend+monday with us. She is so cute and Rooney just adores her. I am sure I will post pictures sometime soon ;)



And now we are here… Friday afternoon and the wind is blowing and the clouds are looming as a literal calm before the storm sets in here in Lexington. But I feel at peace, because even though I know finals are coming that I have plenty of work ahead of me, I have enjoyed the past week and have been very much refreshed by it.



It also helps that David and I have a date planned for tonight and then lots more fun plans for the rest of the weekend. You will hear about them soon.

These are photos from the sister-in-law’s baby shower on Saturday. It was an adorable bear-themed shower for Katie and her baby boy that is due in only 5 weeks. I have such beautiful nieces, Lexi and Cordelia, and a handsome nephew, Grayson and I can’t wait to meet my new nephew soon!

Shopping Spree!

Confession: One bad habit that I have is that whenever someone compliments me on anything that I am wearing I quickly blurt out where I got it and how cheap it was. And now I will display my bad habit for all to see. Even though I do not consider myself a very fashionable person I LOVE bargains! And this Friday I found some of the best.



If you have been around me for long my aforementioned bad habit has probably led me to recommend the Gap Clearance Store to you. It is this big warehouse in Hebron, KY (aka, the middle of no where, but close to my parents’ house) which sells Banana Republic, Gap and Old Navy things for really, really cheap. Now you definitely sacrifice a pleasant shopping experience for the bargains… Most of the time I have to carve out 3-4 hours so that I can pick through the crowded racks of clothes which are mostly stained or ripped. However, to me it is totally worth it. Because I am pretty patient when it comes to shopping, and since I dislike shopping in general to me outlet shopping isn’t that much worse. If I have to buy clothes, I might as well get them cheap. Thus, about 95% of my wardrobe is from this huge outlet.



My mom and sis made a trip there on Friday night and I got some great stuff. Below is me attempting to take pictures of me, who is awkward, in some of my cute new clothes.
